Process Description:
Washing
Crushing
After washing, olive fruits are crushed using Hammer crusher for obtaining homogeneous paste and subsequently the oil is separated from pulp, skin, bone and water in an ambient temperature of 24 -27degress centigrade.
Cold Press
The olive paste is then Cold pressed using Chillex . It is specially designed for working under cold conditions, for retaining quality of oil recovered with six stage press operation. It is used for producing Cold Pressed Olive Oil. In this system, first the separation of the solid phase is made and then the separation of the liquid phases is carried out.
Two Phase Centrifuging
In olive oil two – phase Centrifuging is the most modern process and is used commonly . In two-phase system, solid and liquid alpechin phases come together, and separated from the liquid oil. It proved to be the most efficient system and that is why it is the most used.
Decanting
Decanting is a natural process by which oil, water and solids still present are separated.
Separation
The resulting oil is usually accompanied by a small percentage of solid and liquid impurities, so it has to be subjected to a final cleaning or purification process, this operation is performed using vertical centrifuges.
Filtration
The final oil is then filtered using a mechanical filter before bottling. For Extravergin Olive Oil, Filtration process is not required.
